I recently shared the chicken noodle soup recipe I got from one of my favorite cookbooks (fixate) that goes along with my nutrition plan! It’s so simple and tasty that even the family loves it.

1 rotisserie chicken (cut up or pulled apart without bones or skin)
1.5 cups diced carrots
1 cup diced celery
1/2 cup diced white/sweet onion
1 tsp dried oregano
1/4 tsp sea salt
1/4 tsp black pepper
2 tsp virgin olive oil
1 1/4 cups rice noodles (or your own preference of noodles)
4 cups organic low sodium chicken broth

Heat oil in pot on medium heat and add celery and onion for 5 minutes. Add chicken, carrots, salt, oregano, pepper, and chicken broth and bring to a boil. Add noodles and boil on low-medium heat covered for 10 minutes (until noodles are cooked). Makes 4 servings! Voila! Let me know what you think!
